Arroz con Camarones

Ingredients:

  • 1 cup long-grain rice
  • 2 cups seafood broth
  • 1 lb shrimp, peeled and deveined
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup frozen peas
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Directions:

  1. In a large skillet, heat olive oil over medium heat.
  2. Add chopped onion, garlic, and bell pepper; sauté until softened.
  3. Stir in the paprika and cumin, cooking for an additional minute.
  4. Add the rice and stir to coat it in the oil and spices.
  5. Pour in the seafood broth, season with salt and pepper, and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 15 minutes.
  7. Add the shrimp and peas, stirring gently to combine.
  8. Cover and cook for another 5-7 minutes, or until shrimp are cooked through and rice is tender.
  9. Remove from heat and let sit for a few minutes before fluffing with a fork.
  10. Garnish with fresh cilantro before serving.
