Ingredients:
- 1 cup farro
- 2 medium sweet potatoes, peeled and diced
- 1 red onion, sliced
- 4 oz goat cheese, crumbled
- 3 tablespoons olive oil
- 1 teaspoon smoked paprika
- Salt to taste
- Pepper to taste
- 2 cups mixed greens
- 1/4 cup pumpkin seeds
- 2 tablespoons balsamic vinegar
Directions:
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the diced sweet potatoes and sliced red onion with 2 tablespoons of olive oil, smoked paprika, salt, and pepper.
- Spread the sweet potato and onion mixture on a baking sheet and roast for 25-30 minutes, or until tender and caramelized.
- While the vegetables are roasting, cook the farro according to package instructions until tender, about 20-25 minutes. Drain and set aside.
- In a large bowl, combine the cooked farro, roasted sweet potatoes, and onions.
- Add the remaining tablespoon of olive oil, balsamic vinegar, and mix well.
- Fold in the mixed greens and top with crumbled goat cheese and pumpkin seeds.
- Serve warm or at room temperature.
