Ingredients:

  • 1 cup farro
  • 2 medium sweet potatoes, peeled and diced
  • 1 red onion, sliced
  • 4 oz goat cheese, crumbled
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Pepper to taste
  • 2 cups mixed greens
  • 1/4 cup pumpkin seeds
  • 2 tablespoons balsamic vinegar

Directions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the diced sweet potatoes and sliced red onion with 2 tablespoons of olive oil, smoked paprika, salt, and pepper.
  3. Spread the sweet potato and onion mixture on a baking sheet and roast for 25-30 minutes, or until tender and caramelized.
  4. While the vegetables are roasting, cook the farro according to package instructions until tender, about 20-25 minutes. Drain and set aside.
  5. In a large bowl, combine the cooked farro, roasted sweet potatoes, and onions.
  6. Add the remaining tablespoon of olive oil, balsamic vinegar, and mix well.
  7. Fold in the mixed greens and top with crumbled goat cheese and pumpkin seeds.
  8. Serve warm or at room temperature.
