Ingredients:
- 2 avocados, pitted and removed from skin
- 1 jalapeno, seeds removed, diced
- 1/2 cup diced red onion
- juice from 1 lime (about 3 tablespoons)
- 1/4 cup cilantro
- 1/2 teaspoon cumin
- 1/4 teaspoon kosher salt
- 1/4 teaspoon garlic powder
- 3 cups cooked shredded chicken
- 8 slices sourdough bread
Directions:
- Mash avocados in a bowl just until they are mostly mashed but you still want some chunks.
- Fold in jalapenos, red onion, lime juice, cilantro, cumin, kosher salt and garlic powder. Mix well.
- Fold in shredded chicken. Mix well. Cover and refrigerate for at least 30 minutes.
- When ready to eat, toast the sourdough bread. Divide the chicken salad evenly between 4 slices of toasted bread.
- Top with remaining slices of bread. Serve.
