Ingredients:

  • 6 slices of bacon, chopped
  • 4 eggs
  • 2 medium potatoes, diced
  • 1/2 onion, diced
  • 1 bell pepper, diced
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions:

  1. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the bacon grease in the skillet.
  2. Add the diced potatoes to the skillet and cook until golden brown and crispy, about 10-12 minutes.
  3. Add the diced onion and bell pepper to the skillet with the potatoes. Cook until vegetables are tender.
