Balsamic Glazed Stuffed Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup fresh basil leaves, chopped
  • 4 slices mozzarella cheese
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. Butterfly each chicken breast and season with salt and pepper.
  3. In a small bowl, mix balsamic vinegar and olive oil.
  4. Brush the balsamic mixture on the inside of each chicken breast.
  5. Layer sun-dried tomatoes, basil leaves, and mozzarella cheese on one side of each chicken breast.
  6. Fold the other half of the chicken breast over the filling and secure with toothpicks.
  7. Place the stuffed chicken breasts in a baking dish and brush with remaining balsamic mixture.
