Ingredients:

  • 1 lb sausages of your choice
  • 4 large potatoes, peeled and diced
  • 1/2 cup milk
  • 4 tbsp butter
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Directions:

  1. In a large skillet, cook the sausages over medium heat until browned and cooked through. Set aside.
  2. In a pot, boil the diced potatoes until tender. Drain the water and return the potatoes to the pot.
  3. Mash the potatoes while gradually adding the milk and butter until smooth and creamy.
  4. Stir in the chopped parsley and season with salt and pepper.
  5. Serve the sausages on a bed of the herb mash.
