Beef Sandwich with Savory Gravy

Ingredients:
- 2 pounds beef chuck roast
- 2 tablespoons olive oil
- 1 onion, sliced
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 4 hoagie rolls
- 1 cup shredded provolone cheese
Directions:
- Preheat oven to 300°F (150°C).
- In a large Dutch oven, heat olive oil over medium-high heat. Sear the beef chuck roast on all sides until browned.
- Remove the beef from the pot and set aside. In the same pot, add sliced onions and garlic, sauté until softened.
- Return the beef to the pot. Add beef broth, Worcestershire sauce, thyme, salt, and pepper.
- Cover and braise in the oven for about 3 hours, or until the beef is fork-tender.
- Remove the beef from the pot and let it rest for 10 minutes before slicing.
- Meanwhile, strain the cooking liquid and return it to the pot. Simmer until slightly thickened for the gravy.
- Slice the hoagie rolls and fill each with sliced beef. Top with provolone cheese.
- Place sandwiches under the broiler for 2-3 minutes until the cheese is melted.
- Serve hot with the gravy on the side.
