Ingredients:
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup butter, softened
- 3/4 cup milk
- 1 teaspoon vanilla extract
- 1 cup mixed berry jelly
- 1 tablespoon lemon zest
- Powdered sugar for dusting
Directions:
- Preheat oven to 375°F (190°C).
- In a large bowl, mix flour, sugar, baking powder, and salt.
- Cut in the butter until the mixture resembles coarse crumbs.
- Stir in the milk and vanilla extract until a soft dough forms.
- On a floured surface, roll out the dough into a rectangle, about 1/4 inch thick.
- Spread the mixed berry jelly evenly over the dough, leaving a 1/2 inch border.
- Sprinkle lemon zest over the jelly.
- Carefully roll the dough from the long side to form a log.
- Cut the log into 1-inch thick slices and place them on a greased baking sheet.
- Bake for 20-25 minutes, or until golden brown.
- Allow to cool slightly and dust with powdered sugar before serving.
