Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter, softened
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup mixed berry jelly
  • 1 tablespoon lemon zest
  • Powdered sugar for dusting

Directions:

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix flour, sugar, baking powder, and salt.
  3. Cut in the butter until the mixture resembles coarse crumbs.
  4. Stir in the milk and vanilla extract until a soft dough forms.
  5. On a floured surface, roll out the dough into a rectangle, about 1/4 inch thick.
  6. Spread the mixed berry jelly evenly over the dough, leaving a 1/2 inch border.
  7. Sprinkle lemon zest over the jelly.
  8. Carefully roll the dough from the long side to form a log.
  9. Cut the log into 1-inch thick slices and place them on a greased baking sheet.
  10. Bake for 20-25 minutes, or until golden brown.
  11. Allow to cool slightly and dust with powdered sugar before serving.
