Ingredients:

  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup milk
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup ricotta cheese
  • 1/4 cup powdered sugar
  • 1 cup fresh blueberries
  • 2 tbsp butter, for cooking

Directions:

  1. In a mixing bowl, whisk together flour, eggs, milk, sugar, and vanilla extract until smooth batter forms.
  2. In a separate bowl, combine cream cheese, ricotta cheese, and powdered sugar. Mix until well blended.
  3. Heat a non-stick skillet over medium heat and lightly grease with butter.
