Blueberry Cheesecake Cookies

Serving Size: 36 cookies

Ingredients:

  • 2 7 ounce packages blueberry muffin mix.
  • 1/2 tsp baking soda
  • 4 ounces cream cheese, softened
  • 1 stick of butter, softened
  • 1/4 cup brown sugar
  • 2 eggs
  • 1 1/2 cups white chocolate chips

Directions:

  1. In a large mixing bowl cream butter and cream cheese together.
  2. Mix in the eggs, baking soda and brown sugar and mix until blended.
  3. Add in both packages of muffin mix and mix well, stir in white chocolate chips.
  4. Refrigerate dough for 1-2 hours.
  5. Preheat oven to 350
  6. Scoop out 1 1/2 tablespoons of dough (medium cookie scoop) and place on baking sheet 2 inches apart
  7. Bake cookies for 15 minutes or until golden brown around the edges.
