Serving Size: Serves 8
Ingredients:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup whole milk
- 1/2 cup heavy cream
- 4 oz semisweet chocolate, chopped
- 2 tablespoons corn syrup
Directions:
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a mixing bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until smooth.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely.
- In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add the chopped chocolate and corn syrup. Stir until the chocolate is completely melted and the mixture is smooth.
- Cut the cake horizontally into two equal layers. Place one layer on a serving plate and spread a generous amount of the chocolate mixture over the top. Place the second layer on top and cover the cake with the remaining chocolate mixture.
- Refrigerate the cake for at least 1 hour before serving to allow the chocolate glaze to set.
- Slice and serve this delicious Boston Cream Pie Delight!
