Ingredients:

  • 2 cups cooked rice
  • 4 strips bacon, chopped
  • 2 large eggs
  • 1 cup frozen peas and carrots
  • 3 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Directions:

  1. In a large skillet, cook the chopped bacon over medium heat for 5-7 minutes until crispy. Remove and set aside, leaving the grease in the pan.
  2. Add the frozen peas and carrots to the skillet and stir-fry for about 3 minutes until heated through.
  3. Push the vegetables to the side of the skillet, crack the eggs into the empty space, and scramble them for 2-3 minutes until fully cooked.
  4. Add the cooked rice to the skillet, followed by the soy sauce and sesame oil. Stir everything together for 3-4 minutes until heated through.
  5. Add the cooked bacon back into the skillet, along with the sliced green onions. Mix well and season with salt and pepper to taste.
