Ingredients:

  • 4 large egg whites
  • 200g caster sugar
  • 1 tsp vanilla extract
  • 300ml double cream
  • 200g mixed berries (strawberries, raspberries, blueberries)
  • 50g meringue nests, crushed
  • Fresh mint leaves for garnish

Directions:

  1. Preheat the oven to 120°C and line a baking tray with parchment paper.
  2. In a clean, dry bowl, whisk the egg whites until stiff peaks form.
  3. Gradually add the caster sugar while whisking until the mixture is glossy and stiff.
  4. Fold in the vanilla extract gently.
  5. Spoon the meringue mixture onto the prepared baking tray to form nests.
  6. Bake for 1 hour until the meringues are crisp on the outside.
  7. In a separate bowl, whip the double cream until soft peaks form.
  8. Gently fold in the mixed berries and crushed meringue nests.
  9. To assemble, layer the berry and cream mixture in glasses, alternating with extra crushed meringue.
  10. Garnish with fresh mint leaves before serving.
