Brown Sugar and Cinnamon Acorn Squash

Ingredients:

  • 2 small acorn squash, halved and seeded
  • 8 (heaping) tsp Wholesome Organic Dark Brown Sugar
  • 4 tsp vegan margarine (or butter)
  • 1 tsp ground cinnamon

Directions:

  1. Preheat the oven to 400°F.
  2. Line a rimmed baking pan with unbleached parchment paper.
  3. Put the acorn squash halves, cut-side-up, on the prepared baking pan.
  4. Put 2 heaping teaspoons of organic dark brown sugar, 1 teaspoon of margarine, and ¼ teaspoon of cinnamon in the center of each squash.
  5. Tent foil over the squash and bake 45 to 55 minutes or until the squash is soft and the filling is bubbling.
