Butterscotch Oatmeal Bars

Ingredients:

  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1 cup butterscotch chips
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Directions:

  1. Preheat the oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper.
  2. In a mixing bowl, combine the melted butter, brown sugar, and granulated sugar.
  3. Add the egg and vanilla extract, mix until well combined.
  4. Stir in the flour, oats, baking soda, and salt until a dough forms.
  5. Fold in the butterscotch chips.
  6. Press the dough evenly into the prepared baking pan.
  7. Bake for 20-25 minutes or until the edges are golden brown.
  8. Allow the bars to cool completely before cutting into squares.
