Ingredients:
- 2 cups cherry tomatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 8 ounces fresh mozzarella, sliced
- 1 cup fresh basil leaves
- 1/4 cup pine nuts, toasted
- 1/4 cup grated Parmesan cheese
- 1 garlic clove
- 1/4 cup extra virgin olive oil
- Balsamic glaze for drizzling
Directions:
- Preheat the oven to 400°F (200°C).
- Toss the cherry tomatoes with olive oil, salt, and pepper on a baking sheet.
- Roast the tomatoes in the oven for 20 minutes, or until they are blistered and caramelized.
- While the tomatoes are roasting, prepare the basil pesto by blending the basil leaves, pine nuts, Parmesan cheese, garlic, and extra virgin olive oil in a food processor until smooth.
