Caramel Corn Delight

Ingredients:

  • 1/2 cup popcorn kernels
  • 1 cup brown sugar
  • 1/2 cup unsalted butter
  • 1/4 cup corn syrup
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/2 tsp vanilla extract

Directions:

  1. Preheat oven to 250°F (120°C).
  2. Pop the popcorn kernels using your preferred method and place in a large bowl.
  3. In a saucepan, melt butter over medium heat. Add brown sugar, corn syrup, and salt. Cook, stirring occasionally, until the mixture reaches 250°F on a candy thermometer.
  4. Remove from heat and quickly stir in baking soda and vanilla extract.
  5. Pour the caramel over the popcorn and toss to coat evenly.
  6. Spread the popcorn on a baking sheet lined with parchment paper.
  7. Bake for 1 hour, stirring every 15 minutes.
  8. Allow to cool before breaking into clusters.
