Caramelized Onion and Bread Soup with Brûléed Blue Cheese

Difficulty: MEDIUM

Prep Time: 15 minutes

Cook Time: 50 minutes

Total Time: 1 hour 5 minutes

Serving Size: Serves 4

Ingredients:

  • 3 large onions, thinly sliced
  • 3 tbsp butter
  • 6 cups beef or vegetable broth
  • 4 cups cubed bread (French baguette works well)
  • 1 cup heavy cream
  • 1 cup blue cheese, crumbled
  • Salt and pepper to taste
  • Brown sugar for brûlée topping

Directions:

  1. In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized, about 30 minutes.
  2. Add the broth to the pot with the caramelized onions. Bring to a simmer.
  3. Add the cubed bread to the soup and let it simmer for another 10 minutes, allowing the bread to soak up the flavors.
  4. Stir in the heavy cream and season with salt and pepper.
  5. Preheat the broiler. Fill oven-safe soup bowls with the soup, top each with a generous amount of crumbled blue cheese, and sprinkle a thin layer of brown sugar over the cheese.
  6. Place the bowls on a baking sheet and broil until the sugar caramelizes and the cheese is bubbly and slightly browned.
  7. Serve hot and enjoy!
