- 2 large onions, thinly sliced
- 2 tbsp butter
- 1/4 cup balsamic vinegar
- 4 oz goat cheese, crumbled
- Fresh thyme leaves for garnish
- Salt and pepper to taste
Directions:
- Preheat the oven to 400°F (200°C).
- In a pan, melt butter over medium heat and add the sliced onions. Cook, stirring occasionally, until onions are caramelized, about 20-25 minutes.
- Add balsamic vinegar to the caramelized onions and cook for another 2-3 minutes. Season with salt and pepper.
- Roll out the puff pastry and cut into 4 equal squares. Place the pastry squares on a baking sheet lined with parchment paper.
