Caramelized Onion and Goat Cheese Tarts

Ingredients:

  • 1 sheet of puff pastry, thawed
  • 2 large onions, thinly sliced
  • 2 tbsp butter
  • 1/4 cup balsamic vinegar
  • 4 oz goat cheese, crumbled
  • Fresh thyme leaves for garnish
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 400°F (200°C).
  2. In a pan, melt butter over medium heat and add the sliced onions. Cook, stirring occasionally, until onions are caramelized, about 20-25 minutes.
  3. Add balsamic vinegar to the caramelized onions and cook for another 2-3 minutes. Season with salt and pepper.
  4. Roll out the puff pastry and cut into 4 equal squares. Place the pastry squares on a baking sheet lined with parchment paper.
  5. Divide the caramelized onions among the pastry squares, leaving a border around the edges.
  6. Crumble goat cheese over the onions on each tart.
  7. Bake in the preheated oven for 15-18 minutes or until the pastry is puffed and golden brown.
  8. Garnish with fresh thyme leaves before serving.
