Ingredients:
- 2 tbsp butter
- 1 large onion, thinly sliced
- 4 slices of bread
- 8 slices of cheddar cheese
- Salt and pepper to taste
Directions:
- In a skillet, melt 1 tbsp of butter over medium heat.
- Add the thinly sliced onions, season with salt and pepper, and cook until caramelized, about 15 minutes. Set aside.
- Butter one side of each bread slice with the remaining butter.
- Place 2 slices of cheddar cheese on the unbuttered side of 2 bread slices.
- Top with a generous portion of caramelized onions and another slice of cheddar cheese.
- Cover with the remaining bread slices, buttered side out.
- Heat a skillet over medium heat and cook the sandwiches until golden brown and cheese is melted, about 3-4 minutes per side.
- Slice the sandwiches diagonally and serve hot.
