Cast Iron Liver and Onions With Bacon

Serving Size: 4 servings

Ingredients:

  • 2 tbsp butter
  • 1 olive oil
  • 1 onion sliced
  • 4 strips of thick cut bacon, roughly chopped
  • 1 16oz package beef liver
  • 2 tsp kosher salt, divided

Directions:

  1. In a cast iron skillet on medium low heat melt butter and olive oil, add onions and cook until onions are very tender about 30 minutes, remove from skillet and keep warm.
  2. On medium heat cook bacon until just crispy, remove and set on paper towels to drain, roughly chop bacon and set aside.
  3. Add beef liver in a single lay and sprinkle liver with 1 tsp of kosher salt. Cook liver for 5 minutes turn liver over and sprinkle with the remaining salt.
  4. Cook for another 5 minutes. Add onions back into the skillet along with the bacon and cook for an additional 5 minutes
  5. Serve warm.
