Ingredients:
- 2 tbsp butter
- 1 olive oil
- 1 onion sliced
- 4 strips of thick cut bacon, roughly chopped
- 1 16oz package beef liver
- 2 tsp kosher salt, divided
Directions:
- In a cast iron skillet on medium low heat melt butter and olive oil, add onions and cook until onions are very tender about 30 minutes, remove from skillet and keep warm.
- On medium heat cook bacon until just crispy, remove and set on paper towels to drain, roughly chop bacon and set aside.
- Add beef liver in a single lay and sprinkle liver with 1 tsp of kosher salt. Cook liver for 5 minutes turn liver over and sprinkle with the remaining salt.
- Cook for another 5 minutes. Add onions back into the skillet along with the bacon and cook for an additional 5 minutes
- Serve warm.
