Ingredients:

  • 2 cups all-purpose flour
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup butter
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • Salt and pepper to taste

Directions:

  1. In a mixing bowl, combine flour, eggs, sour cream, and a pinch of salt. Knead the dough until smooth. Let it rest for 30 minutes.
  2. Roll out the dough on a floured surface and cut out rounds using a cookie cutter.
  3. In a skillet, melt butter and sauté bacon until crispy. Remove from heat and stir in cheddar cheese.
  4. Fill each dough round with the bacon and cheese mixture. Fold over and seal the edges.
  5. Boil the perogis in salted water until they float to the surface, then pan-fry in butter until golden brown.
