Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 6 large flour tortillas
  • 1/4 cup vegetable oil

Directions:

  1. In a large skillet, cook ground beef over medium heat until browned. Add onion, garlic, and red bell pepper, and cook until vegetables are tender.
  2. Stir in black beans, cumin, chili powder, salt, and pepper. Cook for another 5 minutes, then remove from heat.
  3. Preheat the oven to 375°F (190°C).
  4. Place a portion of the beef mixture onto each flour tortilla, sprinkle with cheddar cheese, and fold the sides in. Roll up the tortillas.
