Ingredients:
- 1 lb ground beef
- 1 small onion, chopped
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 can (14 oz) black beans, drained and rinsed
- 1 can (10 oz) enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 8 small flour tortillas
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Directions:
- Preheat the oven to 375°F (190°C).
- In a large skillet, brown the ground beef over medium-high heat. Add the onion, red bell pepper, and garlic. Cook until vegetables are tender.
