Cheesy Cauliflower Breadsticks

Ingredients:

  • 1 medium head cauliflower, cut into florets
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 2 eggs
  • Salt and pepper to taste
  • Marinara sauce for dipping

Directions:

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place the cauliflower florets in a food processor and pulse until they resemble rice.
  3. Transfer the cauliflower rice to a microwave-safe bowl and microwave for 5-6 minutes until softened.
  4. Allow the cauliflower to cool slightly, then place it in a clean kitchen towel and squeeze out excess moisture.
  5. In a mixing bowl, combine the cauliflower, mozzarella cheese, Parmesan cheese, oregano, garlic powder, eggs, salt, and pepper. Mix until well combined.
