Ingredients:
- 1 medium head cauliflower, cut into florets
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 2 eggs
- Salt and pepper to taste
- Marinara sauce for dipping
Directions:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place the cauliflower florets in a food processor and pulse until they resemble rice.
- Transfer the cauliflower rice to a microwave-safe bowl and microwave for 5-6 minutes until softened.
- Allow the cauliflower to cool slightly, then place it in a clean kitchen towel and squeeze out excess moisture.
