Ingredients:

  • 2 cups shredded rotisserie chicken
  • 4 bell peppers
  • 1 cup cooked quinoa
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 cup diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a bowl, mix together the shredded chicken, cooked quinoa, cheddar cheese, onion, tomatoes, garlic powder, chili powder, salt, and pepper.
