Ingredients:

  • 4 medium russet potatoes
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup breadcrumbs

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. Wash and dry the potatoes. Slice them thinly, about 1/4 inch apart, stopping about 1/2 inch from the bottom so they remain intact.
  3. In a bowl, mix heavy cream, garlic, thyme, salt, and pepper.
  4. Drizzle the olive oil over the potatoes, ensuring it seeps into the slices.
  5. Place the potatoes in a baking dish and pour the cream mixture over them, making sure it gets between the slices.
  6. Sprinkle the cheddar and Parmesan cheese on top, followed by breadcrumbs.
  7. Cover the dish with aluminum foil and bake for 45 minutes.
  8. Remove the foil and bake for an additional 15-20 minutes until the top is golden and the potatoes are tender.
