Ingredients:
- 4 medium russet potatoes
- 1 cup heavy cream
- 1 cup shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup breadcrumbs
Directions:
- Preheat the oven to 375°F (190°C).
- Wash and dry the potatoes. Slice them thinly, about 1/4 inch apart, stopping about 1/2 inch from the bottom so they remain intact.
- In a bowl, mix heavy cream, garlic, thyme, salt, and pepper.
- Drizzle the olive oil over the potatoes, ensuring it seeps into the slices.
- Place the potatoes in a baking dish and pour the cream mixture over them, making sure it gets between the slices.
- Sprinkle the cheddar and Parmesan cheese on top, followed by breadcrumbs.
- Cover the dish with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15-20 minutes until the top is golden and the potatoes are tender.
