Ingredients:
- Leftover meatloaf, crumbled - 2 cups
- Bell peppers, halved and deseeded - 4
- Cooked quinoa - 1 cup
- Shredded cheddar cheese - 1 cup
- Diced onion - 1/2 cup
- Minced garlic - 2 cloves
- Tomato sauce - 1 cup
- Salt - 1 tsp
- Black pepper - 1/2 tsp
- Olive oil - 2 tbsp
- Chopped fresh parsley, for garnish - 2 tbsp
Directions:
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté onion and garlic until softened.
- Add crumbled meatloaf, cooked quinoa, salt, and black pepper to the skillet. Cook for 5 minutes, stirring occasionally.
- Stir in half of the shredded cheddar cheese and tomato sauce. Remove from heat.
- Stuff each bell pepper half with the meatloaf mixture and place them in a baking dish.
- Sprinkle the remaining cheddar cheese over the stuffed peppers.
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Garnish with chopped parsley before serving.
