Turn your leftover meatloaf into a delicious and cheesy meal by stuffing it inside bell peppers. This recipe combines the flavors of meatloaf with the sweetness of bell peppers for a satisfying dish that's easy to make.

Cheesy Meatloaf Stuffed Bell Peppers

Ingredients:

  • Leftover meatloaf, crumbled - 2 cups
  • Bell peppers, halved and deseeded - 4
  • Cooked quinoa - 1 cup
  • Shredded cheddar cheese - 1 cup
  • Diced onion - 1/2 cup
  • Minced garlic - 2 cloves
  • Tomato sauce - 1 cup
  • Salt - 1 tsp
  • Black pepper - 1/2 tsp
  • Olive oil - 2 tbsp
  • Chopped fresh parsley, for garnish - 2 tbsp

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté onion and garlic until softened.
  3. Add crumbled meatloaf, cooked quinoa, salt, and black pepper to the skillet. Cook for 5 minutes, stirring occasionally.
  4. Stir in half of the shredded cheddar cheese and tomato sauce. Remove from heat.
  5. Stuff each bell pepper half with the meatloaf mixture and place them in a baking dish.
  6. Sprinkle the remaining cheddar cheese over the stuffed peppers.
  7. Cover the baking dish with foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  9. Garnish with chopped parsley before serving.
