Ingredients:

  • 8 lasagna noodles
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions. Drain and set aside.
  3. In a bowl, mix together the chopped spinach, ricotta cheese, Parmesan cheese, egg, garlic powder, onion powder, salt, and black pepper.
  4. Spread a layer of the spinach and cheese mixture onto each lasagna noodle.
  5. Roll up each noodle and place seam-side down in a baking dish.
