Cheesy Spinach Stuffed Portabella Mushrooms

Ingredients:

  • 4 large portabella mushrooms
  • 1 cup chopped spinach
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. Remove the stems from the portabella mushrooms and gently scrape out the gills using a spoon.
  3. In a pan, heat olive oil over medium heat. Add garlic and red pepper flakes, sauté until fragrant.
  4. Add chopped spinach to the pan and cook until wilted. Season with salt and pepper.
  5. Remove the pan from heat and stir in mozzarella and parmesan cheese until melted.
  6. Stuff each portabella mushroom with the spinach and cheese mixture.
  7. Place the stuffed mushrooms on a baking sheet and bake in the preheated oven for 20-25 minutes, or until mushrooms are tender and cheese is bubbly.
