Ingredients:
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3 cups old-fashioned oats
- 1 cup raisins
Directions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine the flour, baking soda, cinnamon, and salt; stir into the creamed mixture until just blended.
- Mix in oats and raisins. Drop by heaping spoonfuls onto the prepared baking sheet.
- Bake for 12-14 minutes in the preheated oven, or until edges are golden. Cool on the baking sheet for 5 minutes before transferring to wire racks to cool completely.
