Chewy Oatmeal Raisin Cookies

Ingredients:

  • 1 stick Butter; softened
  • 3/4 cup Brown sugar; firmly packed
  • 1/4 cup Granulated sugar
  • 1 large Egg
  • 2/3 teaspoon Vanilla
  • 3/4 cup Flour
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Cinnamon
  • 1 1/2 cups Quick cooking oatmeal; uncooked
  • 3/4 cup Raisins
  • 1/4 teaspoon Salt; optional

Directions:

  1. Preheat oven to 350. Beat together butter and sugars until creamy. Add egg and vanilla and beat well.
  2. In a seperate bowl, combine flour, baking soda, cinnamon, and salt (optional) and mix well.
  3. Add combined flour mixture to the sugar mixture and stir until blended Stir in oatmeal and raisins and mix well.
  4. Drop by rounded tablespoons onto an ungreased cookie sheet and bake 10-12 minutes or until golden brown. Cool one minute on cookie sheet and remove to wire rack to finish cooling.
