Ingredients:
- 2 cups all-purpose flour
- 1/2 cup coconut oil, solid
- 1/2 teaspoon salt
- 4-5 tablespoons cold water
- 1 cup chickpeas, cooked and mashed
- 1/2 cup carrots, finely diced
- 1/2 cup celery, finely diced
- 1/4 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon turmeric
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
Directions:
- In a mixing bowl, combine flour and salt. Cut in the coconut oil until the mixture resembles coarse crumbs.
- Gradually add cold water, one tablespoon at a time, mixing until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
- In a skillet, sauté onion and garlic until translucent. Add carrots and celery, cooking until softened.
- Stir in mashed chickpeas, soy sauce, smoked paprika, turmeric, black pepper, and parsley. Cook for another 5 minutes and remove from heat.
- Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface and cut into circles.
- Place a spoonful of the chickpea mixture in the center of each circle. Fold over and press the edges to seal.
- Place the hand pies on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown.
