Deliciously flaky hand pies filled with a savory chickpea mixture, perfect for a snack or meal on the go.

Chick-un Vegan Hand Pies

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup coconut oil, solid
  • 1/2 teaspoon salt
  • 4-5 tablespoons cold water
  • 1 cup chickpeas, cooked and mashed
  • 1/2 cup carrots, finely diced
  • 1/2 cup celery, finely diced
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Directions:

  1. In a mixing bowl, combine flour and salt. Cut in the coconut oil until the mixture resembles coarse crumbs.
  2. Gradually add cold water, one tablespoon at a time, mixing until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
  3. In a skillet, sauté onion and garlic until translucent. Add carrots and celery, cooking until softened.
  4. Stir in mashed chickpeas, soy sauce, smoked paprika, turmeric, black pepper, and parsley. Cook for another 5 minutes and remove from heat.
  5. Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface and cut into circles.
  6. Place a spoonful of the chickpea mixture in the center of each circle. Fold over and press the edges to seal.
  7. Place the hand pies on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown.
