Ingredients:

  • 2 lbs chicken thighs, bone-in and skin-on
  • 2 tbsp olive oil
  • 2 onions, sliced
  • 2 bell peppers (red and green), sliced
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup chicken broth
  • 1/4 cup white wine
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Season chicken thighs with salt, pepper, paprika, and cayenne pepper.
  2. In a large skillet, heat olive oil over medium-high heat. Brown the chicken thighs on both sides. Remove and set aside.
  3. In the same skillet, add more olive oil if needed. Sauté onions, bell peppers, and garlic until softened.
  4. Stir in diced tomatoes, chicken broth, and white wine. Bring to a simmer.
  5. Return the chicken thighs to the skillet. Cover and cook for 25-30 minutes or until chicken is cooked through.
  6. Adjust seasoning with salt and pepper if necessary.
  7. Garnish with fresh parsley before serving.
