Ingredients:
- 4 chicken thighs, bone-in and skin-on
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Directions:
- Heat olive oil in a large skillet over medium heat.
- Season the chicken thighs with salt and pepper, then add them to the skillet, skin-side down. Sear for about 5-7 minutes until golden brown, then flip and cook for another 5 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add chopped onion and sliced bell pepper. Sauté for about 5 minutes until softened.
- Add minced garlic and cook for an additional minute until fragrant.
- Pour in the diced tomatoes and chicken broth, then add oregano and basil. Stir to combine.
- Return the chicken to the skillet, skin-side up, and bring the mixture to a simmer.
- Cover and reduce heat to low. Cook for 30-35 minutes, until the chicken is cooked through and tender.
- Garnish with fresh parsley before serving.
