Chili-Lime Bison Steak with Chimichurri Sauce

Ingredients:

• 4 bison steaks (6 oz each)
• 2 tbsp olive oil
• 2 tbsp chili powder
• Zest and juice of 2 limes
• Salt and black pepper to taste
• Chimichurri Sauce:
• 1 cup fresh parsley, chopped
• 1/4 cup fresh cilantro, chopped
• 2 cloves garlic, minced
• 1/4 cup red wine vinegar
• 1/2 cup olive oil
• 1 tsp red pepper flakes
• Salt and black pepper to taste

Directions:

1. In a bowl, combine olive oil, chili powder, lime zest, lime juice, salt, and pepper. Rub this mixture over the bison steaks and let them marinate for at least 30 minutes.
2. Preheat the grill to medium-high heat. Grill the bison steaks for about 4-5 minutes per side for medium-rare, or to your desired level of doneness.
3. For the chimichurri sauce, mix parsley, cilantro, garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper in a bowl. Let the flavors meld for 15 minutes.
4. Serve the grilled bison steaks with a generous dollop of chimichurri sauce on top.
