Chilled Watermelon Gazpacho

Serving Size: Serves 4

Ingredients:

  • 4 cups diced seedless watermelon
  • 1 cucumber, peeled and diced
  • 1 red bell pepper, seeded and diced
  • 1/2 red onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh mint leaves
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • Salt and pepper to taste

Directions:

  1. In a blender, combine watermelon, cucumber, red bell pepper, red onion, garlic, basil, and mint. Blend until smooth.
  2. Add olive oil and red wine vinegar to the blender and blend until well combined.
  3. Season with salt and pepper to taste. Chill the gazpacho in the refrigerator for at least 1 hour before serving.
  4. Stir well before serving. Garnish with additional mint leaves if desired.
