Ingredients:
- 4 cups diced seedless watermelon
- 1 cucumber, peeled and diced
- 1 red bell pepper, seeded and diced
- 1/2 red onion, diced
- 2 cloves garlic, minced
- 1/4 cup fresh basil leaves
- 1/4 cup fresh mint leaves
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- Salt and pepper to taste
Directions:
- In a blender, combine watermelon, cucumber, red bell pepper, red onion, garlic, basil, and mint. Blend until smooth.
- Add olive oil and red wine vinegar to the blender and blend until well combined.
- Season with salt and pepper to taste. Chill the gazpacho in the refrigerator for at least 1 hour before serving.
- Stir well before serving. Garnish with additional mint leaves if desired.
