Chinese Buffet Style Pepper Chicken

Ingredients:

  • 500g boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1/2 tsp black pepper
  • 1/2 tsp white pepper
  • 1/2 tsp ginger, minced
  • 1/2 tsp garlic, minced
  • 1/2 red bell pepper, sliced
  • 1/2 green bell pepper, sliced
  • 1/2 onion, sliced
  • 2 tbsp vegetable oil
  • 1/2 cup chicken broth
  • 1 tbsp cornstarch
  • Salt to taste
  • Fresh cilantro for garnish

Directions:

  1. In a bowl, marinate the chicken pieces with soy sauce, oyster sauce, sugar, black pepper, white pepper, ginger, and garlic for 30 minutes.
  2. Heat vegetable oil in a pan over medium-high heat. Add the marinated chicken and stir-fry until cooked through.
  3. Add the sliced bell peppers and onion, and continue to stir-fry for another 2-3 minutes.
  4. In a small bowl, mix chicken broth with cornstarch to create a slurry. Pour the slurry into the pan and stir well to combine.
  5. Cook until the sauce thickens and coats the chicken and vegetables. Adjust seasoning with salt if needed.
  6. Garnish with fresh cilantro and serve hot over steamed rice or noodles.
