Ingredients:

  • 1 and 1/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1/2 cup brewed chai tea, cooled
  • 1/4 cup vegetable oil
  • 1 tablespoon bourbon
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/4 cup pecans, chopped
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons milk

Directions:

  1. Preheat oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, mix buttermilk, chai tea, vegetable oil, bourbon, vanilla extract, and egg until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Divide the batter evenly among the cupcake liners and bake for 18-20 minutes.
  6. Let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  7. For the frosting, beat butter until creamy. Gradually add powdered sugar, beating until smooth.
  8. Stir in chopped pecans, vanilla extract, and milk until frosting reaches desired consistency.
  9. Frost cooled cupcakes with butter pecan frosting.
