Ingredients:

  • 1 whole duck (about 5-6 lbs)
  • 1 cup fresh cranberries
  • 1/2 cup orange juice
  • 1/4 cup honey
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. Pat the duck dry with paper towels and season the cavity with salt and pepper.
  3. In a saucepan, combine cranberries, orange juice, honey, balsamic vinegar, garlic, thyme, salt, and pepper. Bring to a simmer and cook until the cranberries burst and the mixture thickens.
  4. Brush the duck with the cranberry glaze, reserving some for basting. Place the duck on a rack in a roasting pan.
