Ingredients:

• 1 cup all-purpose flour
• 1 cup water
• 1/2 cup unsalted butter
• 1/4 tsp salt
• 1/4 cup sugar
• 2 eggs
• 1/2 tsp vanilla extract
• Vegetable oil for frying
• 1/4 cup sugar
• 1 tsp ground cinnamon

Directions:

1. In a saucepan, combine water, butter, salt, and 1/4 cup sugar. Bring to a boil.
2. Remove from heat and stir in flour until a smooth dough forms.
3. Let the dough cool slightly, then beat in eggs one at a time until smooth.
4. Stir in vanilla extract.
5. Heat vegetable oil in a large pot for frying.
6. Scoop small portions of the dough and carefully drop into the hot oil.
7. Fry until golden brown, then drain on paper towels.
8. In a separate bowl, mix 1/4 cup sugar and ground cinnamon.
9. Roll the fried churro bites in the sugar-cinnamon mixture until coated.
10. Serve warm and enjoy!
