Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 1 1/2 cups diced apples
  • 1/2 cup chopped walnuts
  • For streusel topping: 1/4 cup all-purpose flour, 1/4 cup brown sugar, 1/2 tsp ground cinnamon, 2 tbsp cold butter

Directions:

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, whisk together the melted butter, eggs, buttermilk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Fold in the diced apples and chopped walnuts gently.
  6. Fill each muffin cup with the batter, about 3/4 full.
