Citrus Seared Scallops with Herb Infused Butter

Ingredients:

• 8 large sea scallops
• 1 lemon, zested and juiced
• 2 tablespoons olive oil
• 4 tablespoons unsalted butter
• 2 cloves garlic, minced
• 1 tablespoon fresh parsley, chopped
• Salt and pepper to taste

Directions:

1. Pat dry the scallops with paper towels and season with salt, pepper, and lemon zest.
2. Heat olive oil in a large skillet over medium-high heat.
3. Add the scallops to the skillet and sear for 2-3 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
