Ingredients:

  • 4 cod fillets (6 oz each)
  • 2 tablespoons olive oil
  • 1 large fennel bulb, sliced thinly
  • 1 orange, zested and juiced
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 1/4 cup white wine
  • Fresh parsley for garnish

Directions:

  1. Preheat the oven to 300°F (150°C).
  2. In a large ovenproof skillet, heat the olive oil over medium heat. Add the sliced fennel and sauté until softened, about 5 minutes.
  3. Stir in the garlic, thyme, orange zest, lemon zest, and season with salt and pepper. Cook for another 2 minutes until fragrant.
  4. Nestle the cod fillets into the fennel mixture, then drizzle with the citrus juices and white wine.
  5. Transfer the skillet to the preheated oven and slow-roast for 20-25 minutes, or until the cod is flaky and cooked through.
  6. Remove from the oven, garnish with fresh parsley, and serve immediately.
