Ingredients:
- 4 cod fillets (6 oz each)
- 2 tablespoons olive oil
- 1 large fennel bulb, sliced thinly
- 1 orange, zested and juiced
- 1 lemon, zested and juiced
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
- 1/4 cup white wine
- Fresh parsley for garnish
Directions:
- Preheat the oven to 300°F (150°C).
- In a large ovenproof skillet, heat the olive oil over medium heat. Add the sliced fennel and sauté until softened, about 5 minutes.
- Stir in the garlic, thyme, orange zest, lemon zest, and season with salt and pepper. Cook for another 2 minutes until fragrant.
- Nestle the cod fillets into the fennel mixture, then drizzle with the citrus juices and white wine.
- Transfer the skillet to the preheated oven and slow-roast for 20-25 minutes, or until the cod is flaky and cooked through.
- Remove from the oven, garnish with fresh parsley, and serve immediately.
