Ingredients:
- 2 medium eggplants
- 3 cloves garlic, minced
- 1/4 cup tahini
- 3 tablespoons lemon juice
- 2 tablespoons olive oil
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley, for garnish
Directions:
- Preheat the oven to 400°F (200°C).
- Pierce the eggplants with a fork and place them on a baking sheet. Roast in the oven for 45-50 minutes until soft.
- Let the eggplants cool, then peel off the skin and chop the flesh.
- In a food processor, combine the eggplant flesh, garlic, tahini, lemon juice, olive oil, cumin, salt, and pepper. Blend until smooth.
