Classic Crumpets

Ingredients:
- 2 cups all-purpose flour
- 1 cup warm milk
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon active dry yeast
- 1/2 cup warm water
- Butter for greasing
Directions:
- In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for 5-10 minutes until frothy.
- In a large mixing bowl, combine the flour, salt, and baking powder.
- Add the warm milk and the yeast mixture to the dry ingredients. Mix until smooth and well combined.
- Cover the bowl with a cloth and let the batter rise in a warm place for about 1 hour, or until doubled in size.
- Heat a griddle or non-stick frying pan over low-medium heat and lightly grease with butter.
- Pour 1/4 cup of the batter into a metal crumpet ring on the griddle. Cook for 5-7 minutes until bubbles form on the surface.
- Carefully remove the ring and flip the crumpet to cook for another 2-3 minutes until golden brown.
- Repeat with the remaining batter, greasing the rings as needed.
