Ingredients:

  • 2 cups all-purpose flour
  • 1 cup warm milk
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon active dry yeast
  • 1/2 cup warm water
  • Butter for greasing

Directions:

  1. In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine the flour, salt, and baking powder.
  3. Add the warm milk and the yeast mixture to the dry ingredients. Mix until smooth and well combined.
  4. Cover the bowl with a cloth and let the batter rise in a warm place for about 1 hour, or until doubled in size.
  5. Heat a griddle or non-stick frying pan over low-medium heat and lightly grease with butter.
  6. Pour 1/4 cup of the batter into a metal crumpet ring on the griddle. Cook for 5-7 minutes until bubbles form on the surface.
  7. Carefully remove the ring and flip the crumpet to cook for another 2-3 minutes until golden brown.
  8. Repeat with the remaining batter, greasing the rings as needed.
