Ingredients:
- 4 large onions, thinly sliced
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 4 cups beef broth
- 1 cup dry white wine
- 2 tablespoons all-purpose flour
- 1 bay leaf
- 1 teaspoon thyme
- Salt and pepper to taste
- 8 slices of baguette
- 2 cups grated Gruyère cheese
Directions:
- In a large pot, melt the butter and olive oil over medium heat.
- Add the sliced onions and sugar, cooking until the onions are caramelized, about 20-25 minutes.
- Sprinkle the flour over the onions and stir to combine, cooking for an additional 2 minutes.
- Slowly add the white wine, scraping the bottom of the pot to deglaze.
- Add the beef broth, bay leaf, thyme, salt, and pepper. Bring to a simmer and cook for 30 minutes.
- Preheat the oven to 400°F (200°C).
- Ladle the soup into oven-safe bowls, top each with a slice of baguette, and sprinkle with Gruyère cheese.
- Place the bowls on a baking sheet and bake in the oven until the cheese is bubbly and golden, about 10-15 minutes.
