Ingredients:
- 2 pounds fresh mussels, cleaned
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 cup white wine
- 1 cup heavy cream
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
- 4 large russet potatoes, cut into fries
- Vegetable oil for frying
- Sea salt for seasoning
Directions:
- Heat olive oil in a large pot over medium heat. Add garlic and onion, sauté until softened.
- Pour in the white wine and bring to a simmer. Add the mussels and cover the pot, cooking until mussels open, about 5-7 minutes.
- Stir in the heavy cream and parsley, season with salt and pepper, and cook for another 2 minutes.
- While the mussels are cooking, heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
- Fry the potato fries in batches until golden brown and crispy, about 5-6 minutes per batch.
- Remove fries from oil, drain on paper towels, and season with sea salt.
- Serve the mussels hot with a side of crispy fries.
