A delightful pairing of fresh mussels cooked in a creamy white wine sauce served with crispy, golden fries.

Classic Moules-Frites

Ingredients:

  • 2 pounds fresh mussels, cleaned
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup white wine
  • 1 cup heavy cream
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 4 large russet potatoes, cut into fries
  • Vegetable oil for frying
  • Sea salt for seasoning

Directions:

  1. Heat olive oil in a large pot over medium heat. Add garlic and onion, sauté until softened.
  2. Pour in the white wine and bring to a simmer. Add the mussels and cover the pot, cooking until mussels open, about 5-7 minutes.
  3. Stir in the heavy cream and parsley, season with salt and pepper, and cook for another 2 minutes.
  4. While the mussels are cooking, heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  5. Fry the potato fries in batches until golden brown and crispy, about 5-6 minutes per batch.
  6. Remove fries from oil, drain on paper towels, and season with sea salt.
  7. Serve the mussels hot with a side of crispy fries.
