Ingredients:

  • 2 lbs beef chuck roast
  • 2 lbs beef marrow bones
  • 2 onions, peeled and halved
  • 4 carrots, peeled and chopped
  • 4 celery stalks, chopped
  • 4 leeks, white parts only, washed and chopped
  • 1 bouquet garni (thyme, parsley, bay leaves)
  • Salt and pepper to taste
  • Water

Directions:

  1. In a large pot, place the beef chuck roast and beef marrow bones.
  2. Add the onions, carrots, celery, leeks, and bouquet garni to the pot.
  3. Season with salt and pepper.
  4. Cover the ingredients with water, ensuring everything is submerged.
  5. Bring the pot to a boil, then reduce the heat to low and simmer for 3 hours, skimming off any impurities that rise to the surface.
  6. Once the meat is tender, remove it from the pot and slice it.
  7. Strain the broth and return it to the pot.
  8. Serve the sliced meat and vegetables in bowls, then ladle the hot broth over them.
