 - 1 1/2 cups cheese curds
 - 2 cups beef gravy
 - Salt and pepper to taste
 - Vegetable oil for frying
 
Directions:
- Peel the potatoes and cut them into thick fries.
 - Rinse the fries under cold water to remove excess starch.
 - Heat the vegetable oil in a deep fryer or large pot to 325°F (165°C).
 - Fry the potatoes in batches until they are light golden brown, about 4-5 minutes per batch.
 - Remove the fries from the oil and let them drain on paper towels.
 - Increase the oil temperature to 375°F (190°C).
 - Fry the potatoes again in batches until they are crispy and golden brown, about 2-3 minutes per batch.
 - Remove the fries from the oil, season with salt and pepper, and keep them warm.
 - In a saucepan, heat the beef gravy until hot.
