Ingredients:

  • 4 large potatoes, russet or Yukon Gold
  • 1 1/2 cups cheese curds
  • 2 cups beef gravy
  • Salt and pepper to taste
  • Vegetable oil for frying

Directions:

  1. Peel the potatoes and cut them into thick fries.
  2. Rinse the fries under cold water to remove excess starch.
  3. Heat the vegetable oil in a deep fryer or large pot to 325°F (165°C).
  4. Fry the potatoes in batches until they are light golden brown, about 4-5 minutes per batch.
  5. Remove the fries from the oil and let them drain on paper towels.
  6. Increase the oil temperature to 375°F (190°C).
  7. Fry the potatoes again in batches until they are crispy and golden brown, about 2-3 minutes per batch.
  8. Remove the fries from the oil, season with salt and pepper, and keep them warm.
  9. In a saucepan, heat the beef gravy until hot.
  10. To assemble the poutine, place a layer of fries on a plate, top with cheese curds, and pour hot gravy over the top.
